There is always skiing in the mountains- you can go to Switzerland and go in the Alps or northern Italy. Stay in hostels- go to

Very doubtful if there is skiing in May. These days there is not even much snow in winter

Not many chances of skying in may…not verysmall chances to ski cheap in Europe.
